STOP EATING BORING BREAKFAST!!

Breakfast is one of my favorite meals. I can eat it any time of the day. Eggs go with almost anything, not just bacon and sausage! This morning I made an open faced cajun catfish sandwich. Sooooo good, sooooooo flavorful, and soooooo simple. I just seasoned a piece of catfish with cajun seasoning and threw it in the oven. I make  my own seasoning mixes and store them in my pantry, maybe I'll do a post later on some of my seasoning mixes. While my catfish was in the oven I cooked a slice of bacon and fried an egg. Then I just assembled it over a slice of wheat toast and spinach. Delicious!

Best Snow Day Ever!

So my mom calls me and tells me there's going to be a blizzard. Then my job calls me and tells me we're going to be closed because there is going to be a blizzard. Then my friend Takee calls me and tells me she is off today cause there is going to be a blizzard and to come cook her some duck. I look outside and don't see a drop of snow so I head to Whole Foods to buy a duck. I spent the rest of the unsnowy afternoon drinking wine, catching up on girl talk and roasting a duck. I roasted it for about four hours, turning every hour and basting it with a pomegranate glaze for the last hour. It was awesome!




But almost the best part about roasting a duck is saving the duck fat. Its so flavorful and you can use it for so many things. This morning I used the leftover fat from my roasted duck to make fried potatoes. I just used about a tablespoon of the fat and heated it in a pan on med high. If you didn't happen to roast a duck recently you can also buy it from some markets. I've used this brand from Wegmans before 



Then I added potatoes and onions and seasoned it with salt and pepper. 


I fried my potatoes for about fifteen minutes til they were beginning to brown




Then I slid the whole pan in the oven on 350 while I made the rest of my breakfast. 



I served them on the side of fish and grits and scrambled eggs. Yum!

Baked Eggs


I wanted breakfast, I wanted something delicious, and I wanted something different from the ol' bacon, egg and toast routine. So this is what I came up with, basically a baked egg in a puff pastry. This isn't really even a recipe because you can do what ever you want with it. Preheat your oven to 350

Start with puff pastry sheets and cut them into squares



Grease a ramekin dish. 


And lay the square of puff pastry right in there. 


Then start on your egg mixture. I just used one egg cause my dishes were pretty small. Add some cream or half and half, salt and pepper. I added some rosemary too but it came out WAY faster than i anticipated.




Then add your favorite ingredients, I used spinach, bacon and some smoked gouda, but the possibilities are endless. You can use sausage, artichokes, whatever you have in the fridge. 


Once you've added your ingredients pour them into your puff pastry. 


Throw it in the oven for about 30 minutes or until the egg is set and voila! Simple and delicious breakfast!
