Best Snow Day Ever!

So my mom calls me and tells me there's going to be a blizzard. Then my job calls me and tells me we're going to be closed because there is going to be a blizzard. Then my friend Takee calls me and tells me she is off today cause there is going to be a blizzard and to come cook her some duck. I look outside and don't see a drop of snow so I head to Whole Foods to buy a duck. I spent the rest of the unsnowy afternoon drinking wine, catching up on girl talk and roasting a duck. I roasted it for about four hours, turning every hour and basting it with a pomegranate glaze for the last hour. It was awesome!




But almost the best part about roasting a duck is saving the duck fat. Its so flavorful and you can use it for so many things. This morning I used the leftover fat from my roasted duck to make fried potatoes. I just used about a tablespoon of the fat and heated it in a pan on med high. If you didn't happen to roast a duck recently you can also buy it from some markets. I've used this brand from Wegmans before 



Then I added potatoes and onions and seasoned it with salt and pepper. 


I fried my potatoes for about fifteen minutes til they were beginning to brown




Then I slid the whole pan in the oven on 350 while I made the rest of my breakfast. 



I served them on the side of fish and grits and scrambled eggs. Yum!
